Quick and Easy

Okay my super gourmet foodie friends; I love your deliciously amazing sounding recipes, but in my reality I rarely have time to cook much of anything for dinner unless you're counting the frozen fish I stick in the toaster oven and bag of frozen veggies I nuke in the microwave.  I am sharing this easy, healthy, one pot meal that I make with you all in hopes that you in return can share any crock pot or easy recipes that you go to on a day you know you won't have much time to cook?

*I use chicken breasts instead of the thighs.  Also, if I don't decide to make it until the day of, I use canned beans.
